Frequently Asked Questions
What exactly is cold storage in the food industry?
Refrigeration in the food industry refers to all refrigeration technologies and equipment used in production, distribution, air treatment, and process cooling to maintain the temperatures of products and controlled environments necessary for the production, processing, storage, and transportation of food products, thereby contributing to the management of the cold chain.
What is the cold chain?
The process known as the cold chain helps preserve the nutritional and sanitary qualities of food by limiting the growth of pathogenic microorganisms, thereby ensuring consumer safety in accordance with current regulations.
When does the cold chain break?
A break in the cold chain occurs as soon as the temperature exceeds the regulatory thresholds: above +4°C for highly perishable products (fresh meat, fish) and above +8°C for perishable products (dairy products, butter). For deep-frozen products, any temperature exceeding -18°C for more than 30 minutes constitutes a break in the cold chain, thereby compromising food safety.
What are the recommended temperatures for different types of food?
The temperature ranges vary by food category: positive cold storage between +0°C and +4°C is suitable for fresh animal-based products, +2°C to +18°C for dairy products, cheese, and fruits and vegetables, while freezer temperatures of -18°C or even -25°C are used for frozen foods. Storage temperatures as low as -50°C may be required for certain seafood products.
These temperature selections are critical, depending on the nature of the food products, to preserve and ensure their nutritional and organoleptic qualities as well as their optimal preservation.
How do I choose the right refrigeration solution for my industry?
The choice of a refrigeration solution depends on your business (processing, storage, distribution), the volume to be handled, the required temperatures (positive or negative), logistics flows, space constraints, and your CSR objectives.
Our specialized engineering teams conduct a comprehensive analysis (specifications, thermal analysis, sizing, regulatory requirements) and propose customized solutions that comply with regulations.
What are the recommended refrigerants today?
In accordance with the European F-Gas 2024 regulation, we now recommend natural refrigerants such as CO₂ (R744) and ammonia (R717).
· CO₂ (R744): a high-performance, safe solution for many small- to medium-capacity systems in the food industry; suitable for transcritical and subcritical configurations depending on operating conditions.
· Ammonia (R717): a high-efficiency natural refrigerant for high-capacity industrial systems (requires specific safety measures and strict regulatory compliance).
These solutions are gradually replacing HFCs and HFOs with high global warming potential (GWP).
The choice of refrigerant will depend on the capacity, the design of the compression cycle (direct, cascade), safety constraints, and regulatory requirements (inspections, operator certification, maintenance).
How can cold produce heat?
Industrial thermodynamic refrigeration is a significant heat transfer process that can be harnessed. The heat generated by the refrigeration cycle, rather than being discharged into the air or water, can be recovered —either in whole or in part—through heat exchange or supercharging to supply industrial sites with hot water at temperatures ranging from 25 to 85°C for washing, space heating, or process applications.
